Why a contract, not on-demand visits
A café or restaurant in Agadir (Marina, Talborjt, corniche, avenue Hassan II) stacks three constraints at once: daily footfall, possible hygiene inspection, and opening hours that leave no slack. A one-off visit fixes one evening; an annual contract fixes the year — with a steadier per-m² rate and a team that knows the premises.
The clauses that matter
- Intervention hours: before opening (floors, shopfront, terrace) or after closing (kitchen, hoods, bathrooms). The two combine; state the slots in the contract.
- Frequency and a written task list: daily (floors, bathrooms, bins, surfaces), weekly (full glazing, under tables, skirting), monthly (hoods, heavy degreasing, carpets if any).
- Signed key register: one key per named agent, issued against signature, no copies. This is the clause that protects your till and your licence.
- Products and food safety: compliant product data sheets, food-area products kept separate from sanitary equipment, never restocked above preparation zones.
- Guaranteed substitutes: an absent agent = a trained substitute, not a lost slot. Check the contract states it in writing.
The hood and degreasing trap
Hoods and the ventilation filter are what the standard visit “forgets”. A serious contract schedules them at a fixed frequency (usually monthly or bi-weekly depending on volume) and bills them as a separate line — not as a surprise “extra”.
What should flow between you and the team
- A single point of contact (not a different agent every week);
- a photo report after heavy interventions (hoods, degreasing);
- a monthly control visit with the manager, reviewing the task list.
The full scope is on the offices and premises cleaning page; closing-time guarding combines with the same contract (retail guarding).
